Fruit Smoothie

What you need:
  • 1/4 cup of blueberries
  • 1/4 cup of strawberries
  • 1 banana
  • 1/4 cup of fresh spinach
  • 1/4 cup of strawberry yogurt
  • splash of coconut water
  • 4 ice cubs

You can use fresh or frozen, since all the fruit was on sale I used fresh fruit for my smoothie. Any flavor yogurt works as well! Blend all desired ingredients until well blended! Pour smoothie into a protein shake bottle and you have a smoothie to go! Makes one, 16 oz serving. Regular smoothies are expensive. For my smoothie, it cost me 2.50 per 16oz serving! So much cheaper than orange Julius or berry blendz!

 Strawberry Cupcakes
These strawberry cupcakes are so good, they are way better than store bought cupcakes! You will find that these are very easy to make, and are affordable!
Here's what you will need to make 24 cupcakes:
  • Two 16oz cans of Pillsbury Strawberry Frosting
  • 1 Box of Pillsburry Confetti Cake Mix (Valentine's Day Edition) *You can find this at the dollar store.
  • 24 Cupcake liners, comes with 24 heart toothpicks *Also found at the dollar store.
  • Wilton's 18 Piece Cake Decorating Set *Hobby Lobby
  • Cupcake baking pan
  • 12 Strawberries
  • Red Sugar

  1. Follow the instructions for baking the cups on the back of the cake mix box.  (For my cupcakes I baked them at 350 degrees for about 15 minutes).Time may vary depending on the type of oven you have.
  3.  Let cupcakes cool before frosting. For faster cooling times I stuck my cupcakes in 2 plastic containers and placed them into my freezer half covered, for about 5 minutes.
  5. Once cupcakes are fully cooled, you can start the frosting process. I used Wiltons Frosting Tip #12. Place frosting into plastic bag found in the Wilton's cake decorating set by using a spatula. Add 1/2 cup of frosting to the bag. Start by squeezing the frosting onto the cupcake roating the cupcake in a circular motion. This will get the results in the above photo.
  7. Rinse and cutt strawberries in half, placing them onto the frosted cupcake.
  9. Place heart shaped decorative toothpicks into cupcakes
  11. Sprinkle red decorating sugar onto cupcakes
  13. Place all cupcakes into a plastic container with lid in the freezer to set the frosting
  15. Once frosting is set, store cupcakes in the fridge until ready to serve!
To make your cupcakes stand out, place them on a decorative plate. I found mine at the dollar store!

Roasted Zucchini with Shrimp

Looking for a delicious yet healthy dinner for this week? This is going to be it! What is great about this recipe is that you can change the ingredients!
Vegetable Mix
  • 2 Medium Zucchini's
  • 2 Roma Tomato's
  • 1 Large Green Pepper
  • 1 Large Red Pepper
  • 2 Tablespoons of garlic, minced
  • 1/4 Cup of Extra Virgin Olive Oil
  • 1 Pound of Shrimp, Peeled and Deveined
  • 1 Tablespoon of Crushed Red Pepper Flakes
  • 2 Tablespoons of Extra Virgin Olive Oil
  • Dash of Salt and Pepper
  • 1 16oz Box of Penne Pasta
  • 1 1/2 Cups of  Low Fat Mozzarella Cheese
  • 1/2 Cup of Fresh Parmesan Cheese
Slice zucchini into half circles. Chop green and red peppers, and tomatoes. Mix vegetable's, garlic, and olive oil together in a 9X13 cake pan. Preheat oven to 400 degrees. Roast vegetable mix for 20 minutes or until vegetable's are tender to eat.
In large pan heat saute the shrimp, olive oil, crushed red pepper flakes, and garlic until shrimp is lightly pink. About 3-5 minutes.
Meanwhile in a large pot bring to boil water and salt. Cook pasta until al dente (when the pasta is firm, but not hard). Drain and keep warm on the side.
Once the vegetable's are tender take out of the oven and combined the pasta and vegetable's, shrimp, and 1/2 a cup of mozzarella cheese. Top off the dish with 1 cup of mozzarella cheese and 1/2 cup of parmesan cheese.
Bake at 400 degrees for 10-15 minutes or until cheese is melted and lightly brown.
Try substituting in chicken next time instead of shrimp to give it a different flavor. You can also make this a non-meat dish and it's still my boyfriends favorite dish either way!
